Didn't want to troubleshoot the pgbouncer container, so I just removed it from the stack. I also re-configured the sidekiq containers, scaled down from 44 to 10 containers. (1100 to 250 threads)

We once had over 100.000 monthly active users, but that's down to 7600 now.

I'll also plan a migration to a new server, we need less CPU and RAM, and more disk. And the database should be upgraded from Postgres 14 to 18.
